Stuffed Pepper Soup

This month's recipe is quick, simple and tasty--just the thing for that busy supper hour. It can be made with meat or soy burger for the vegetarian.
Stuffed Pepper Soup
1 pound ground beef or soy 'grillers' meat (like Morningstar's)
1 green pepper, chopped
1 15-ounce can tomato sauce
1 15-ounce can diced tomatoes with juice
1/4 cup packed brown sugar
1/2 teaspoon ground black pepper
1 cube beef bouillon
1/2 tablespoon soy sauce
1 cup cooked rice, white or brown
In a small Dutch oven, brown beef or soy meat over medium high heat. Drain off any fat. Add the peppers andsauté for 3 minutes. Stir in tomato sauce, diced tomatoes with juice, bouillon cube, brown sugar, ground pepper and soy sauce. Reduce heat to low, cover and simmer for 30 to 45 minutes. Stir in rice and heat through. Makes 5 servings.
