Pineapple, Chicken and Peanut Salad
Just three ingredients plus dressing make a delicious salad in a short time.
2 cups cooked chicken breast, cubed
1 can (20 oz.) well-drained pineapple chunks
1 cup dry roasted peanuts (I use the slightly salted kind).
Mix pineapple chunks and chicken together in a bowl.
1/2 cup light mayo (I use Hellman's)
1/2 cup sweet and sour sauce (I use La Choy)
Mix thoroughly. Toss the chicken mixture with the dressing. Chill. Add the peanuts just before serving and toss again. Serve on lettuce. It makes four servings. You can increase the amount of dressing to taste.
