Calico Beans

This recipe was given to me by a dear friend. It makes a lot so be sure and have a large bowl to mix it in and several casseroles - depending on amount of servings - to put it in. It freezes well - either defrost before baking or add an extra l5 or 20 minutes to baking time if frozen.

Calico Beans

1 lb. ground beef or soy substitute (such as Morningstar Grillers)
8 ounces bacon
1 cup chopped onions
1/2 cup ketchup
1/2 cup brown sugar
2 Tbs. vinegar
1 tsp. salt
1 tsp. dry mustard
1 - 15 oz. can butter beans (drained)
1 - 15 oz. can kidney beans (drained)
1 - 15 oz. can chili beans (drained)
1 -15 oz. can lima beans (drained)
l -24 or 32 oz. can baked beans

Brown bacon if using - drain and crumble.
Brown beef or soy mixture and onions in small amount of fat.
Drain and add to other ingredients in a large bowl. Mix.
Put into casseroles.
Bake at 350 degrees for 45 minutes (except as noted above, if frozen)

This may sound somewhat time consuming, but you will have several meals all prepared for a quick supper. Enjoy!
