Here is my favorite holiday cookie recipe. It goes back at least fifty years. Hope you enjoy it as much as I and my family and friends do.
1 cup butter
1/2 cup brown sugar
2 eggs, separated
2 cups all purpose flour
1 and 1/2 cups chopped nuts (I prefer walnuts)
Preheat oven to 300 degrees. Cream butter, blend in sugar. Add egg yolks, beating until light. Blend in flour and roll dough into small balls about one inch in diameter. Slightly beat egg white with a fork . Dip cookies in egg white and roll in chopped nuts. Place on greased cookie sheet, making a depression in the centers. Bake at 300 degrees about 15 minutes. Remove from oven and press down centers again and continue baking for 30 to 35 minutes. Cool slightly and fill center with jelly. Makes about four dozen.
NOTE: do not substitute for currant jelly as the tartness and red jewel-like appearance is the key to this cookie.
