Sweet Potato, Relative Of The Potato

UNITED STATES—For most of us when it comes to having a quick snack we go for the French fry which is composed of white potatoes, Idaho potatoes or Yukon gold potatoes.  Not many of us think of the sweet potato as a substitute for the French fry, but it works.  The big difference between the potato and the sweet potato is its vibrant orange color on the inside and the nutrients you get from the super veggie. The veggie is also sometimes known as a yam.

The sweet potato has been around for centuries and grows well in warm temperatures.  The cold weather does a huge disservice to the vegetable. It’s high in beta-carotene, as well as vitamin A, C, B6, manganese and potassium.  The beta-carotene serves as a useful source for the body which has been considered a vital proponent in fighting cancer.  While it has not been proven, researchers continue to study the effect of beta-carotene on the body.


It’s a versatile veggie that can be baked or fried.  Some choose to supplement the original potato for the sweet potato which is a bit healthier, just be sure not to overindulge with excess butter, sugar or marshmallows to sweeten the veggie or it defeats the purpose.  It’s also commonly used for sweet deserts like the Southern staple, the sweet potato pie which is absolutely tasty. 

 

Some choose to slice the veggie to create candied yams, while others boil the potato to create sweet mashed potatoes. Be careful though over indulging because the sweet potato, like the potato has a high glycemic index that has an effect on blood sugar that causes it to rise quite quickly after a meal which is not good for the body.

 

Cooking tip: julienne a sweet potato to create French fries that you can season with chipotle and black pepper.  Back in the oven on 450 degrees for about 25-30 minutes, with some olive oil. The fry will have a bit of heat, but the taste is incredible.
