Asparagus is one my very favorite veggies, it has wonderful natural diuretic qualities, and it is wonderful for kidney functions, plus it tastes so good.

Sweet and salty asparagus

1 lb. asparagus
2 T. sweet butter or margarine
2 Tbls. brown sugar

Melt the butter in a skillet, add the trimmed asparagus, cover and saute for 5 minutes, uncover, sprinkle salt and sugar, and serve.

Fresh asparagus salad

1 lb. asparagus
1/4 cup extra virgin olive oil
3 T. white vinegar
1 med. size red onion chopped fine
Salt and white pepper

Steam the asparagus until just tender, (don't overcook). Remove immediately and place in a large bowl of ice water; keep it there for three minutes. Remove and place on paper towels to dry well.  In a bowl mix the asparagus, onions, oil, vinegar, salt and pepper.  Refrigerate from one hour to three hours. Serve on a bed of greens, and pour the dressing over the greens. (Use baby greens or mesclun mix, they can be bought pre-packaged.)
