Head Over Heels For Cabbage

Cabbage is one of the healthiest vegetables. It is full of vitamins minerals, and wonderful for the digestion. Savoy is my absolute favorite. It has an almost sweet flavor.

1 large head Savoy
3 cups vegetable stock
2 T vegetable oil (grape seed oil tastes great)
4 cloves garlic, peeled and sliced thin
Salt and pepper

Cut the cabbage into julienne, set side. In a large soup pot heat the oil, add the garlic and sauté until just tender. Add the julienned cabbage, stock, salt and pepper, bring to a boil. Lower the heat and cook covered for 25 minutes, until cabbage is tender. Serve with a large boiled potato.

Cabbage soup

1 head Savoy
1 small head green cabbage
2 T vegetable oil
1 small onion chopped
1 clove garlic minced
8 cups vegetable stock
Salt and pepper

Julienne the cabbages, set aside, heat the oil in a large soup pot, add the onions until just tender, add the cabbage until just limp, add the vegetable stock, salt and pepper. Simmer covered for 40 minutes. Add the garlic just before serving. Serve with croutons.
