Oh Boy, Okra!

Okra is not the most popular of vegetables, but I find it delicious and fun to cook and very easy and tasty.

Fried okra

1 lb. okra, sliced in half
2 eggs
2 T. milk
1 cup flavored bread crumbs
1/2 cup flour
2 cups peanut oil
Salt and pepper

Wash the okra and dry well before using. Using plastic baggies, fill one bag with flour and salt and pepper, and another bag with the bread crumbs.  In a deep dish blend eggs and milk. Heat the oil in a large skillet until very hot and smokey. Put the okra in the bag with the flour, dredge well and remove. Add the okra to the egg wash, then put in the bag with the bread crumbs. Shake well until all the okra is covered. Put one by one in the hot oil and fry quickly on all sides. Serve with a nice blue cheese dressing.

Okra and Corn

1 lb. okra
1 sliced onion
1 red bell pepper chopped
1 cup roasted (or plain) corn kernels
3 T. grapeseed or soy oil (available in health food markets)
Salt and pepper

Heat the oil in a non-stick skillet, add the onion and pepper. Cook until tender. Add the okra and sauté for three minutes. Add the corn. Cook a few more minutes and serve over rice or as a side dish.
