Mmmmmmm, Pie

Desserts are usually vegetarian, but they use eggs and thus are usually not for vegans. The health food markets have wonderful vegan egg replacements.

Pie crusts seem a mystery to most people, but here is an easy, perfect pie crust that can be used with anything that requires a crust.

Indestructible pie crust

2 cups all purpose flour (or whole wheat pastry flour)
10 T. chilled butter, cut into small pieces
1 egg yolk, slightly beaten (or substitute)
6 T. ice water

Place flour in a large bowl, mix with the butter pressing with your fingers until it feels crumbly. Add in the egg yolk, mix again. Add the water until the dough is pliable, divide in two. Can be frozen for a very long time.

3 eggs slightly beaten (or substitute)
1 1/4 cup dark syrup
1/8 tsp. salt
1 tsp. vanilla
1/2 cup granulated sugar
2/3 cups pecans

Put the pecans in the unbaked pie shell. Mix all the other ingredients and pour over the pecans. Bake at 450 degrees for 10 minutes, then reduce heat to 350 and bake for 35 minutes, or until pie is set.
