Beets are a very underrated veggie. They are delicious, naturally sweet, and rich in vitamins and minerals, and a great compliment to any meal. The outdoor farmers markets have beets of many colors, such as yellow, striped, light red and the well known purple.

Desserts are usually vegetarian, but they use eggs and thus not for vegans.  The health food markets have wonderful vegan egg replacements. Pie crusts seem a mystery to most people, but here is an easy, perfect pie crust that can be used with anything that requires a crust.
