UNITED STATES—I’m learning that when it comes to money, there is always a way to save money. For me, I’m learning prepping dinner and lunch for the entire week; at least 5 days at minimum saves a ton of money and prevents that temptation to eat out when I don’t have to. Why spend money if you do not have to do it? You don’t America, you truly don’t. To ensure I had extra bucks in my pocket and bank account for the week, I purchased a massive pack of chicken breast.

Sue me, but I love chicken and considering that I don’t indulge two much red meat if much at all especially in a given month, its versatility is what makes it work most for me. I can do so much with it. I can make chicken noodle soup, chicken salad, salad with chicken, chicken tacos, chicken parmesan, chicken fajitas, chicken quesadillas, lasagna with chicken and a white sauce, chicken chili or simply chicken as the sole protein.

Do you see where I am going with this America? Versatility, options which can be endless, so you don’t get bored with your food choices. For me, I decided three options, actually four when I think of it.

First up was chicken parmesan. I wanted to make something hearty, with plenty of flavor and utilize some ingredients that were nearing the expiration in the fridge. The thing about cooking such a dish is that it takes a long time to prep, which can be frustrating for most Americans. We tend to want things that can be cooked fast and is easy. It takes a little time to put together but once done it’s worth it. You don’t have to eat a ton of it to get full. In addition, it serves two-fold, dinner and can be used as leftovers for lunch the next day, and dinner also.

Then we have chicken quesadillas. The hard part is cooking the chicken. Once that is done, it’s all about utilizing seasoning to get the flavor profile that you want. I prefer quesadilla seasoning if I can find it. McCormick actually does this, but it has been super difficult to find. So, you can use taco seasoning as a substitute if needed. Once you have the chicken and seasoning incorporated, it’s all about technique.

I know there are people who utilize a large tortilla (notably) for burritos to make their quesadilla, I’m a bit different. I take too small tortillas; one for the bottom, then I add my chicken, cheese and roasted red peppers mix on top. What type of cheese? Has to be a good melting cheese, like Monterey Jack and of course mozzarella, but my secret weapon is smoked Gouda. I do at least 2-3 quesadillas and cut them into pieces, which can be eaten for several days as lunch or dinner or both.

The last option is just chicken with a veggie and starch on the side, particular rice, potatoes and things like a veggie medley or peas. I love peas I know I’m only one of many, but I love them and they’re health for you.

My goal is I’ve prepped meals for days now and I’m saving money in the process. I’m certain I could have crafted up several more dishes with the chicken breasts that I cooked, but at the same time you want to think quick and fast when it comes to meal preparation. Imagine spending $25 and crafting enough meals for lunch and dinner for 4-5 days, instead of spending $15 to $20 per day per meal. Do the math America? That’s a lot of money, money on food that may not always be healthy for you if eating out.
